Ingredients:

  • 12 oz (340g) pasta (fettuccine, pappardelle, or your choice)
  • 1 lb (450g) beef sirloin or flank steak, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (cremini, button, or your choice)
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 1 tablespoon soy sauce (optional, for extra depth of flavor)
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set aside.

  2. Prepare the beef: Season the thinly sliced beef with salt and pepper. Heat olive oil in a large skillet or sauté pan over medium-high heat. Add the beef and cook until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.

  3. Cook the vegetables: In the same skillet, add a little more olive oil if needed. Add the chopped onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for another minute.

  4. Add mushrooms: Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-6 minutes.

  5. Create the sauce: Pour in the beef broth and add the dried thyme or rosemary. Stir well and let the mixture simmer for about 5 minutes, allowing the sauce to reduce slightly. If using soy sauce, add it at this stage.

  6. Finish the dish: Reduce the heat to low and stir in the heavy cream. Return the cooked beef to the skillet and simmer for another 2-3 minutes, just until heated through and the sauce is slightly thickened. Adjust seasoning with salt and pepper to taste.

  7. Combine pasta and sauce: Toss the cooked pasta with the beef and mushroom sauce, adding a little of the reserved pasta cooking water if needed to help coat the pasta.

  8. Serve: Divide the pasta among serving plates. Sprinkle with grated Parmesan cheese and garnish with fresh parsley if desired.
